What ingredients do I need?

You'll need good quality couverture. This is available in slabs or, more conveniently, in small buds. You can purchase dark chocolate (54%, 70% or 85%), milk chocolate (34%) and white chocolate (and sugar-free chocolate!).

To make filled chocolates, you will also need a variety of other specialty and non-specialty ingredients.

Specialty ingredients:

  • alcohol such as brandy, rum, cointreau (must be over 60% proof)
  • fruit puree (available in frozen or long-life packs or use the juice and zest from fruit such as lemons and limes)
  • concentrated flavouring
  • tremoline (also known as 'invert sugar' or invertase).

Examples of non-specialty ingredients:

  • cream (must be over 30% fat)
  • glucose
  • caster sugar
  • butter (unsalted)
  • honey
  • dessicated coconut
  • dried fruit such as raisins, apricots, figs etc
  • spices such as cinnamon, chilli etc
